Cocoa roasting

Roasting is the first process to turn cocoa beans into award-winning chocolate. At Nugali, as only the best Brazilian cacao is used and there are no off-flavors to hide, a light roast is possible, enhancing the qualities of beans. The result is a less bitter, much more delicate and fragrant cocoa mass. Roasting at low temperatures preserves the natural antioxidants and other beneficial cocoa properties. This is how 70 or 80% cocoa chocolate can taste really good.
